May 2013 treat of the month — tree nut free version

Ginger cookies and salted peanut rocky road brownies.

For May we brought back two popular Gone Pie treats… one with a very tasty twist!  We re-worked our Rocky Road brownies to be tree nut free, replacing the toasted almonds with some super amazing roasted peanuts. They add a little hint of salt to the sweet gooey brownie blend. Truly divine. (I couldn’t stop eating the peanuts, which taste like Cracker Jack peanuts. Except they’re not stale.)

This is a first step towards the Peanut Butter Caramel-Salted Peanut-Coconut Bacon Brownies we are brewing up for the next Vegan Shop Up!

SALTED PEANUT ROCKY ROAD BROWNIES (6 x 9 tin)

April 2013 treat of the month

Orange glazed ginger cake, peanut butter caramel rice crispy treats and cashew milk chocolate lollipops!

The April treat was truly a month long endeavor. The orange spice cake made it’s debut at the Vegan Shop Up in April. It was a huge hit.

I felt it needed to be a bit darker in color,but did not want a heavy molasses taste. So… inspired by a recent divine carob ice cream experience at Lula’s Sweet Apothecary, I decided to use carob to darken the cake. Amazing idea if I do say so myself! Again, it was a huge hit!

I still was not 100% satisfied. With the addition of a bit more chopped candied orange, now even I’m happy!

The final and most delicious version!

We rounded out the package with some rice crispy treats and chocolate mustache lollipops.

March 2013 treat of the month — tree nut free version

In March we started a new tree nut free treat plan, for those that either prefer or need to avoid eating tree nuts. For this plan, coconut (which is a drupe) and peanuts (which are legumes) may be used. This plan will usually be gluten-free, but not always.

4 Vanilla Macaroons

March 2013 treat of the month

March was a crazy busy month. We had specials for both Easter and Passover. Lots of new recipes. We picked the month’s highlights and shared them with our monthly subscribers.

2 Peaceful Almond Joy (peace signs) — Not your usual almond joy…. a simple filling of almonds, coconut, agave nectar in perfect dark chocolate.

February treat plan: Grainfree snickerdoodles and apple almond coffee cake

February’s Monthly Plan featured a pairing of  the old and the new. We selected an old favorite item (apple almond coffee cake) and a brand new item (The GonePie Snickerdoodle), in an unusual monthly package  without chocolate!

The GonePie Snickerdoodle is a product we just developed; our grainfree take on the classic American snickerdoodle. The recipe for this one is adapted from, of all things, a paleo baking recipe and is grainfree. A rich, chewy cookie with the flavors of almond, coconut and vanilla coming through the cinnamon sugar topping.  These have been a big hit with all our taste testers

The second item, apple coffeecake, is one of our most popular special items. In this month’s package, we made a 6 inch version; a blend of applesauce, almond and spices, which we finish with a lightly spiced, sugar crunch topping.

Early Pi Day Pie Special

Best. Cookie. Ever.

I’m so in love with these cookies, that I must share them with you. They have the most simple and tasty ingredients. I adapted this recipe from a recipe in “Great Gluten-free Vegan Eats”.

The basic cookie is almond meal; organic vegan fairtrade sugar; organic flax seeds; organic tahini; and sea salt. We can either add a bit of  organic lemon or dip the bottom of the cookie in fairtrade chocolate (we add a hint of fresh nutmeg and ground toasted almonds to these). Or maybe you would like a box of each! These cookies are addictive!

Lemon tahini…
